Ichiju-sansai 一汁三菜 translates to "one soup, three dishes", and has been the foundation for a meal in Japan since ancient times. The dishes feature seasonal vegetables and protein, and are served together alongside enduring staples, rice and pickles.

Ichiju-Sansai pop-up is inspired by this ancient Japanese meal framework - 5 courses (one soup, three dishes, a dessert) of Japanese flavours prepared in a mix of traditional and foreign styles, accompanied by matched sake. Dishes are seasonally guided according to the 72 microseasons of the old Japanese calendar.
