It has waved the Singapore flag in countries from Australia all the way to Estonia, long before the state-endorsed chilli crab has. Although a mainstay in almost every Asian restaurant in the Western world, the dish holds more memories for Caucasians than for Singaporeans, who might not have even tried it before. Since 2015, food researcher and writer Sheere Ng has been investigating the dish in cities such as New York, Kuala Lumpur, Hong Kong and Singapore. She will share her findings on the migrations and cross-cultural culinary exchanges that possibly led to the creation of Singapore Noodles, and how its significance has differed across communities, places and times.Sheere Ng is a writer and researcher with an interest in the intersections of food, immigration and identity. Her career in food writing began at Makansutra, a pioneer in celebrating Singapore street food with its guidebook series. In 2013, she left for Boston University to pursue a Master of Liberal Arts in Gastronomy. Upon graduation, she worked for various food-related organisations in the US, including as a researcher for the Museum of Food and Drink, an intern at the butcher shop, Dickson’s Farmstand, and a stagiaire at Fung Tu, a Chinese American restaurant in Manhattan. Now back home in Singapore, she and her partner run the writing studio In Plain Words.
