The topics are :-

1) Initial Calibration of Your Grinder

Calibrating your commercial coffee grinder is something that should be done every morning prior to opening. And if the weather is changing, it may be appropriate to adjust it during the day. In many coffee shops and espresso bars, no one bothers to do this. The result is inconsistent espresso.

Syahrun Naim will be talking on how to get the optimal extraction times and the most efficient way and fastest way to do calibration.

2) Brewing Espresso

Preparing a good coffee needs strict rules. If you skimp on the beans quality, it will dramatically affect your espresso, a poor grinder will also have a bad effect on the end result, and let’s not forget the espresso machine which can make or break your shot.

On brewing a perfect coffee, there are standard barista work order you need to follow.

Syahrun Naim will be talking about ALL THE RULES and what are the essential barista kit you must have as a barista!

3) Milk Steaming

Steamed milk is the end result of milk being exposed to high pressured steam from an espresso machine. It is made by introducing steam gradually into milk until the natural fats within it expand to create ‘micro-foam’, a layer of very small milk bubbles. The end result is a smooth, silkily beverage perfect for espresso based drinks. The idea sounds simple enough, but in practise it requires a gentle touch and sound technique.

In this subtopic, Syahrun Naim will explain briefly and doing a demonstration on how to steam milk.

4) Cleanliness & Work Order

Why cleaning must be a regular part of your barista duties and how to perform them with step-by-step instructions focused on the business-end of your espresso machine. Besides, Syahrun Naim will explain on the workflow for cafes.
