During this workshop, we will be making a Sourdough Focaccia (freeplay garnishing), a Sourdough Seeded Rye, and a Sourdough Crystal Bread. What You'll Learn:
High hydration / wet dough (crystal bread)
Lamination / inclusion how to build a good structure on low gluten flour (rye seeded)
Unshaped and garnishing bread (focaccia)
Note: For intermediate workshops, basics of sourdough making (such as understanding of starter feeding, flour processing, baker's ratio function etc.) will not be covered. Please ensure that you are comfortable with basic sourdough making knowledge before signing up for Intermediate Sourdough Workshop.

About Chef PaulLeading our workshops is Paul Albert, a 27-year-old French chef who—despite his relatively young age—has spent seven years working at cafes and bakeries in France and Brazil. This also includes some time in The Slow Bakery, one of Rio's most popular sourdough bakeries. He has since been living in Singapore and working at Tiong Bahru Bakery heading our sourdough department, and has helmed the menu for the newly-launched Drunken Farmer at Stanley Street, with its extensive menu of sourdough items.Disclaimer:
Our sourdough workshop is suitable for age 10 and above.
This class WILL NOT be adapted for gluten-free diets.
