【Profile of the cooking teacher】 Ms.Yoko Mishima
Ms. Yoko Mishima studied cooking,
confectionery, and bread baking at Le Cordon Bleu Kobe.After graduation, she continues as a
lecturer while she assists cooking experts of Kansai and chefs of a famous
restaurant.
She studies under Mr. Yoshitaka Shimizu, the chef de cuisine
of Michelin star awarded restaurant, "Ajikitcho" located in Shinsaibashi,
Osaka. Mr. Shimizu is now an owner of “Ajishomou”.
Chef, food education coach, Japanese
food producer, and licensed food master for athletes.

Zōni is a soup containing mochi
rice cake as the main ingredient. This dish is eaten the most on New Year ’s Day in Japan. The
preparation of zōni varies both by household and
region.
【Tempura】
Tempura is a
Japanese delicacy consisting of seafood or vegetables that have been battered
and deep fried. Batter is a mixture of egg, water and flour.
【Sashimi】
Sashimi is a
Japanese dish which is a very fresh raw meat or fish sliced into thin pieces. It
is served with a dipping sauce like soy sauce or miso

What is Tukiji Market?
Tsukiji market opened in 1935, when the
fish market in Nihonbashi and the vegetable market in Kyobashi were moved.
It is the wholesale
market for seafood
and vegetables which has the oldest history of the 11 Central
Wholesale Markets in Tokyo.
The supply zone extends to the nearby
prefectures in Kanto Area as well as Tokyo. It is one of the world's largest markets
for marine products in particular and plays a role as a quoted market of Japan.
