Shuntaro Saito, the president of Kirinzan-shuzo (Tsugawa, Niigata) will be the guest. He is handsome and sophisticated but has a very passionate samurai sprit in him. Since long time, Kirinzan has been brewing with a philosophy to make dry and smooth sake that reflects the quality of water in the area when many breweries around Japan were heading to rich sweet type of sake. Together with the farmhouses, Kirinzan has been putting effort to improve the quality of local sake rice grown in the region. Their story of brewing from rice to sake is worth listening to.
