FIRST WINE Flametree Embers Sauvignon Blanc Semillon 2017Paired withSHRIMP & SCALLOP TOSTADASCrispy corn tortillas spread piled with shredded lettuce, diced shrimp, pan-seared scallop, tropical fruit salsa and a sprinkling of coriander. Served with guacamole and sour cream.  SECOND WINE Flametree Chardonnay 2018Paired withMEXICAN STREET CORN CHOWDERA vibrant corn chowder with classic Mexican spices, topped with queso fresco cheese crumbles and chopped coriander. Served with a shot glass of Bourbon-buttered corn kernels on the side. THIRD WINE Flametree Embers Cabernet Sauvignon 2017Paired withFLAMEGRILLED BABY BACK RIBS WITH MOLÉ SAUCETender meat-slips-off-the-bones baby back pork ribs grilled over an open flame and brushed with mole poblano sauce. Cliff has been making world class wines in the Margaret River region for many years and came to Flametree Wines after twelve years as Chief Winemaker at Voyager Estate.Amongst a number of impressive accolades, Cliff was awarded Winemaker of the Year by Winestate Magazine in 2003, was a finalist in the Gourmet Traveller Winemaker of the Year in 2005 and has been a senior judge at the Royal Melbourne and Perth Wine Shows over a number of years.
