Every barista knows it is important to use good coffee beans and equipment to produce a good cup of coffee. It is therefore very important to clean the equipment to ensure that there is no coffee residue left at the end of the day. Coffee beans contain oils - while these oils are responsible for the aroma and crema of your espresso, they can also produce a rancid flavour that develops over time on a dirty machine, resulting in bad tasting coffee.
