Description

This 3-day intensive training course is designed for commercial students whom are interested in starting their own ramen businesses. Apart from being exposed to commercial ramen cooking equipment, authentic recipes and back kitchen workflow, students will also have access to suppliers to ingredients and equipment in SIngapore, Malaysia and Indonesia.

  • Introduction to equipment & utensils for ramen cooking
  • Restaurant workflow and setup
  • Making of Pork bone broth
  • Making of Light chicken broth
  • Noodle making (Using Yamato Noodle Machine)
  • Yakibuta (Grilled pork belly)
  • Tamago (Braised egg)
  • Assorted Vegetables
  • Menma (Bamboo shoots)
  • Flavoured oils (Garlic, Leek Dried Shrimp oil)
  • Food presentation / serving of
